Tofu Scramble with Mushrooms & Spinach (MIND Diet-Friendly)

Ingredients

  • 1 1/2 full block firm tofu, drained and crumbled
  • 2 cups mushrooms, sliced
  • 4 cups spinach
  • 2 tbsp olive oil
  • 1 tsp ground turmeric
  • 1/2 tsp curry powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp nutritional yeast, optional

Instructions

  1. Heat 1 tbsp olive oil in a skillet over medium heat.
  2. Sauté mushrooms until golden & softened (~5 minutes). Remove & set aside.
  3. Add 1 tbsp more olive oil and crumble in tofu. Stir in turmeric, curry powder, garlic powder, salt, and pepper. Cook 5-7 minutes, stirring occasionally.
  4. Stir in spinach, cover and cook until wilted (~1-2 minutes).
  5. Add back mushrooms, mix well, and sprinkle with nutritional yeast if using.
  6. Divide into 4 portions—eat one now, save the others for breakfast!
